Banana Crumb Muffins
With countless snow days this year, there are so many opportunities to make time for baking. Furthermore, every baker needs a go to muffin recipe. Let me introduce you to yours! Plus, it even has banana’s in it…so it’s healthy right?
Ingredients for muffins:
- 1 1/2 c all purpose flour
- 1 t baking soda
- 1 t baking powder
- 1/2 t salt
- 3 mashed bananas
- 3/4 c white sugar
- 1 egg lightly beaten
- 1/3 c butter, melted
Ingredients for crumb topping:
- 1/3 c brown sugar
- 2 Tbs all purpose flour
- 1/8 t cinnamon
- 1 Tbs melted butter
Directions
1. Preheat oven to 375 degrees F. Lightly grease 12 muffin cups, or line with muffin papers.
2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together mashed bananas, sugar, egg and melted butter. Stir the flour mixture into the banana mixture until fully blended. Spoon batter into prepared muffin cups.
3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Melt 1 tablespoon butter and pour this over the mixture. Stir and sprinkle topping evenly over muffins.
4. Bake for 15 to 18 minutes or when a toothpick inserted into the center of a muffin comes out clean.
